Black Bean & Quinoa Salad

Cook quinoa in water with cumin and oregano until finished. While cooking, combine all other ingredients in a large bowl. After quinoa is done, cool, and add to the bowl. Serve at room temperature.

INGREDIENTS:

1 pouch Fig Food Black Beans, drained
1/2 c. extra virgin olive oil
1 medium green bell pepper
diced, 3/4 c. roasted red pepper
diced, 1/2 c. red onion, diced
2 cloves garlic, minced
1 t. dried oregano
1 t. groud cumin
1/2 c. dried quinoa
1 1/2 c. water
1/4 c. chopped fresh cilantro
3 T. freshlyl squeezed limejuice,
1/2 t. sea salt
Freshly ground pepper to taste
