Organic Pinto Beans

THREE BEAN CHILI
Ingredients: 1 pouch Fig Food Pinto Beans (un-drained) • 1 pouch Fig Food Black Beans (un-drained) • 1 pouch Fig Food Cannellini Beans (drained) • 2 T. extra virgin olive oil • 1 c. of white or Spanish onion, diced • 2 garlic cloves, minced • 1 green jalapeño, seeds removed & minced • 3/4 c. red bell pepper, diced • 1/2 c. tomato paste • 1/2 c. water • 1 c. frozen corn • 1/4 c. fresh cilantro, chopped • 1 T. lime juice, freshly squeezed • 1/2 t. sea salt (or to taste) • 1 T. chili powder • 1 t. cumin seed, ground • cayenne pepper to taste
Instructions: Heat the oil in a large pot over medium heat. Saute the onion, peppers, and jalapeño until tender (about 5-7 minutes). Add garlic and spices and saute for 1 minute. Add the remaining ingredients and simmer 10-15 minutes until thick. Add cayenne pepper to taste and garnish as you please.
