Organic Black Beans
Black Bean & Quinoa Salad
Ingredients: 1 pouch Fig Food Black Beans, drained • 1/2 c. extra virgin olive oil • 1 medium green bell pepper, diced • 3/4 c. roasted red pepper, diced • 1/2 c. red onion, diced • 2 cloves garlic, minced • 1 t. dried oregano • 1 t. groud cumin • 1/2 c. dried quinoa • 1 1/2 c. water • 1/4 c. chopped fresh cilantro • 3 T. freshly squeezed lime juice • 1/2 t. sea salt • freshly ground pepper to taste
Instructions: Cook quinoa in water with cumin and oregano until finished. While cooking, combine all other ingredients in a large bowl. After quinoa is done, cool, and add to the bowl. Serve at room temperature.
