Organic Borlotti Beans
MAMMA MARIA’S BEAN SOUP
Ingredients: 1 pouch Fig Food Borlotti Beans • un-drained • 2 t. garlic, minced • 2 T. parsley, chopped • 1 T. extra virgin olive oil • 1 c. tomato puree • 1/2 c. water • 1/3 c. small whole wheat pasta (e.g.; orzo, stelline, ditalini, elbows) • 1/4 t. sea salt • freshly ground pepper to taste
Instructions: Warm olive oil in a pot, and saute garlic until just browning (about 30 seconds). Add parsley, stir, then add tomato puree and simmer for 5 minutes. Add the borlotti beans (with the bean water), water, salt, and the pasta. Simmer 10 minutes or until the pasta is done. Add pepper to taste. Garnish with parsley sprig. Buon appetito!
