JOEL & DAVID’S HUMMUS
Ingredients: 1 pouch Fig Food Chickpeas, drained but save the water • 2 T. tahini • juice from 1/2 lemon • 1 chopped garlic clove • 2 T. extra virgin olive oil • 1/4 t. cumin • dash of cayenne pepper • salt & pepper to taste
Garnish: 1/4 c. chopped parsley, 1/2 t. paprika, 1 T. pine nuts, 1 T. extra virgin olive oil
Instructions: Drain the chickpeas, and place in a food processor with the tahini, lemon, garlic, olive oil, cumin and cayenne pepper. Puree, and check for thickness. If too thick, add some of the bean water as desired. Salt & pepper to taste. Make a beautiful presentation with the parsley, paprika, pine nuts, and the olive oil swirled about the top.
