Organic Dark Red Kidney Beans
MEDITERRANEAN KIDNEY BEAN SALAD
Ingredients: 2 pouches Fig Food Dark Red Kidney Beans, drained • 1/2 c. red onion, cut into thin strips • 1 medium red or orange bell pepper, diced • 1 medium cucumber, peeled, cut in half, seeded and cut into 1/4 inch slices • 1 celery rib, thinly sliced crosswise • 1 garlic clove, minced • 1 1/2 t. dried oregano • 1 t. dried dill weed • 2 T. red wine vinegar • 6 T. extra virgin olive oil • 2 t. Dijon mustard • 1 t. salt, Black pepper to taste
Instructions: Add all ingredients into a large bowl. Toss until well combined. Let salad marinate for about an hour, stirring every 15 minutes. Salad is best enjoyed at room temperature.
