Organic Navy Beans

Ingredients: 1 c. whole wheat couscous  •  1/2 c. raisins (golden are really nice!)  •  2 T. fresh lemon juice, strained  •  2 t. lemon zest, grated  •  1/4 t.ground cinnamon  •  1/4 t. salt  •  2 c. water  •  1 pouch Fig Food Navy Beans, drained  •  1 t. garlic, minced  •  1 T. fresh tarragon, finely chopped  •  1 T. extra virgin olive oil  •  black pepper to taste

Instructions: Combine the raisins, juice, zest, cinnamon, salt and water and bring to a boil. Add couscous, cover and simmer for 2 minutes. Remove from heat, fluff, cover and let stand for 5 minutes. Sauté garlic in the oil until just starting to brown, add the beans and tarragon and warm for 1 minute. Remove from heat, mix in the couscous, and let stand for 5 minutes covered. Add pepper to taste and dig in.
