Organic Small Red Beans

CJ’S RED BEAN AND QUINOA
Ingredients: 1/2 c. quinoa, well-rinsed • 1 c. water • 1/4 t. turmeric • 1 pouch Fig Food Small Red Beans, un-drained • 1 t. garlic, minced • 1/2 yellow onion, diced • 2 T. extra virgin olive oil • 1/2 t. ground cumin • 1/8 t. cayenne (or to taste) • 1/4 t. sea salt • black pepper to taste
Instructions: Prepare the quinoa as directed, adding the turmeric to the water. Warm the water over a medium heat, and saute the green pepper and the onion until soft. Add the garlic and saute for 30 seconds. Add the beans, cayenne, and salt and simmer for 5 minutes (or until broth thickens). Mix in the cooked quinoa, remove from the heat, and let stand for 5 minutes. Add pepper to taste and enjoy.
